The Best Vegan Banana Bread

I have literally been making this vegan banana bread for years.

I have changed it over time, as in, I eliminated all sugar, replaced the eggs with ground flax seed and sometimes add a scoop of Genuine Health protein powder for a protein kick. It is so simple and quick to make and is a hit every single time.


I joke that I try other baked good recipes and create my own, but I always come back to ol' faithful.


The Best Vegan Banana Bread

1 cup flour (I use spelt or a gluten free blend)

1/3 cup ground flax seeds

1 scoop (optional) of Genuine Health protein powder (vegan or whey- whey is not vegan)

1 tsp of baking powder and soda

dash of sea salt

Then mix; 

3 bananas (about 1 cup)

1/4 freshly squeezed lemon

1/4 cup coconut oil

Mix the dry into wet.

Add vegan chocolate chips or bluberries or nuts (all optional)

Bake at 375F for 35 minutes.

Watch it disappear in minutes.
